More than 400 wild plants species, a mild climate and a non - intensive farming practice make Kimolos island a perfect place for beekeeping.
Honey, a saturated mixture of carbohydrates, organic acids, vitamins, minerals, antioxidants and prebiotics is a precious food and medicine, because of its unique composition and chemical properties.
“To melaki” is a pure, wildflower honey with clear, light amber color and distinctive flavor coming from plants with high quality of pollen and nectar like thyme, autumn heather, wild lavender, rock rose etc.
“To melaki” is produced by Costas Prezanis, a young beekeeper, graduate of “The American Farm School of Thessaloniki”. His apiary consists of 150 hives. The apiary is treated conforms to the principles of organic farming.
All products are going to be certified as organic ones, until Autumn 2011.
